But yea slim pickings on building games for consoles, probably because of the more intensive UI, but I can imagine it being possible...
They launched a new game like 3-4 months ago (Darling Discoverers) and they are working on PoP 2 (they teased on twitter).
I don't know if you remember of Sim City on NES. It was amazing! We could have the same feeling on Switch, I'm just afraid than they (developers/editors) will develop a game with the same gameplay and mechanics than a smartphone game...
I didn't play that one, but saw Sim City 2k at a friends and was impressed (plus theme park on megadrive).
Yea I think sometimes the temptation is to copy popular styles of game as they see the rewards as big if they get the same addictive quality going.
My personal preference on the way to make games, based on some prototypes I've done and Kynseed to some degree (though Charlie is the brains of the design :) ), is to start from very little and gradually work out the gameplay/mechanics as you go. That way it hopefully feels more fresh because you are playing and iterating quickly!
Have you done many personal projects just to try some ideas ? And did you use them in a actual game ?

I have done several yes. None finished :) Some spanning years of work, others days/weeks... They are useful to try stuff out and i might subconsciously borrow ideas for sure! I've been tempted to share a few screens somewhere or other just to see what other people think as I doubt I'll ever finish em.

Destiny 2, They are Billions, Assassins Creed Origins.
Just finished Darkside Detectives, pretty funny (some good puns and the spooky library section is ace!) but short (finished in 3-4 hours or so?) point and click game that isn't too taxing. Made by indies from Ireland and currently on sale on GOG.com.
Got the Sexy Brutale to play and Owlboy, been wanting to play them for aaaages. Both look beautiful. Owlboy's pixelart is unreal! Charlie, what was so hard/tricky about it? Just the controls?
Might have just got Skyrim:SE for Christmas as well... oh no! Going for a Dark Elf stealth mage mash up, with the restriction of no bows and arrows to be used, specialising in illusion, stealth and one handed. Not going to try and do the main quest for a while either....
Just beat Zelda: BOTW not too long ago and now I've started up Rogue Galaxy (PS2) for the first time- loving it.
Mario + Rabbids Kingdom Battle. This game can be much more difficult than I expected, but I love it! I fail a lot on the boss battles but it's simple to learn and get better every retry.
